I got several fresh skinless, boneless chicken breasts and sliced them, next, I mixed them together with some fresh spinach and when the chicken was cooked and spinach wilted, I added the sauce packet. It was a creamy Parmesan sauce. In the meantime I cooked about a quarter pound of pasta. When the pasta was drained it joined the chicken mixture in a casserole. The next taste challenge was fun. I got to share my Micro Spaghettio's with my grandsons. I used my coupon, compliments of Campbells to purchase 2 more because one would simply not do for three mouths! They are perfectly portioned and can be microwaved. We ate them right out of the container so there were no dishes to wash. I have to say, the kids loved them, me, not so much but they tasted better then I thought . Definitely a child's delicacy. So after eating lunch, we had enough energy to go to the park and took a 1.25 mile trail through the woods. It was a cold fall Sunday and I decided to use my coupon to get one of the slow cook sauces. I chose the Tavern beef with beer. I had some flap steak in the freezer from summer and I thought this would be a good way to use it up. I cut up the meat and added some green peppers and onions and poured in the sauce. I let it cook in the crock pot for 6 hours. The house smelled heavenly. My daughters fiance commented on how something smells so good. She is a bit of a soup connoisseur. This girl lives on soup! She says it is convenient and satisfying. I have to agree. My lunch is usually a Campbell's single serve soup. The slow Kettle Cooked variety is new so I had to have a taste as well so I used the coupon to buy another. It is the closest thing to homemade noodle soup that I have eaten in a long time. |
Chicken Rice Stew
Stir in chicken, wild rice, carrot and red pepper flakes; return to a simmer, and cook until the carrots are tender, about 5 minutes. Stir in cream starter, and cook until warmed through. Season to taste with salt and pepper before serving.
